What is Moonshine?

 Moonshine is a term typically used to refer to illicitly distilled liquor. The word is derived from the notion of the liquor being made and distributed at night, under cover of darkness. Makers of moonshine are called moonshiners. 


 While moonshine continues to be made illegally in some places in the U.S. today, commercial distillers are also producing a range of varieties and expressions under the name. 


That's all it is: a name.  There is no legal designation for "Moonshine".  It's what the federal government calls a fanciful name.  Nearly any concoction you can think of can be called "Moonshine". 


Many commercially available "moonshines" are flavored neutral grain spirits bought in bulk and are a higher proof making them more symbolic than tasteful to the pallet.

Our Shine

Not your average Cane & Grain

Our goal was "Moonshine " you can enjoy and want to come back for more.  Traditional Appalachian Style shine often contains about 50% corn and 50% sugar in the mash.  More corn can produce a smoother, sweeter distillate.  More sugar will increase overall quantity but tends to make the end product harsher.


Quite frankly we'd prefer a 100% corn mash but would be limited to bottling at 80 proof or higher.  Our compromise was a very heavy corn content with enough sugar to allow our "Shine" to be designated as a "Cane & Grain", flavored and bottled at our target proof.

Making Shine

We distill our "Shine" making tight hearts cuts enabling us to produce a true top shelf quality spirit which is sweetened with cane sugar and flavored with natural flavors.  We do not add unnecessary coloring leaving our Florida Shine as clear as the spring water it's made with.
